Overview | polyglycerol -3 polyricinoleate ("PGPR") is a food additive, the emulsion used to maintain the oil and water systems has a high moisture content, is stable in content and acts as a viscosity modifier. In the chocolate industry, PGPR is used because it results in a significant reduction in the yield stress of molten chocolate. This allows the chocolate to be molded without any bubbles, making it easier to apply the particulate components, while the thickness of the chocolate coating can be optimally adjusted. |
